- 1/2 cup dark chocolate chips
Instructions
- In a blender or food processor, combine the avocados, coconut milk, honey (or maple syrup), cocoa powder, vanilla extract, and salt. Blend until smooth and creamy.
- Stir in the chopped mint leaves until evenly distributed.
- Line a 9×5-inch loaf pan with parchment paper, leaving some overhang for easy removal.
- Pour the avocado mixture into the prepared loaf pan and spread it evenly.
- Sprinkle the dark chocolate chips on top, gently pressing them into the mixture.
- Cover the pan with plastic wrap and freeze for at least 4 hours or until solid.
- Once frozen, remove the ice cream bars from the pan using the parchment paper overhang. Cut into bars and serve immediately.
