Ingredients

  • 2 ripe avocados, halved and pitted
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a medium bowl, combine the Greek yogurt, lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper. Mix until smooth to create a creamy dressing.
  2. In a large skillet over medium heat, add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove from heat.
  3. In a blender or food processor, scoop out the avocado flesh and blend until smooth. Add half of the creamy dressing to the blended avocado and mix until well combined.
  4. To assemble the bowls, place a serving of quinoa or rice at the bottom. Top with cooked shrimp, halved cherry tomatoes, and a generous dollop of the avocado dressing.
  5. Drizzle the remaining creamy dressing over the top and garnish with fresh cilantro. Serve with lime wedges on the side.
