- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados, halved and pitted
- 1/4 cup plain Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a medium bowl, combine the Greek yogurt, lime juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper. Mix until smooth to create a creamy dressing.
- In a large skillet over medium heat, add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove from heat.
- In a blender or food processor, scoop out the avocado flesh and blend until smooth. Add half of the creamy dressing to the blended avocado and mix until well combined.
- To assemble the bowls, place a serving of quinoa or rice at the bottom. Top with cooked shrimp, halved cherry tomatoes, and a generous dollop of the avocado dressing.
- Drizzle the remaining creamy dressing over the top and garnish with fresh cilantro. Serve with lime wedges on the side.
Notes
- For added crunch, top with sliced radishes or crushed tortilla chips.
- Substitute shrimp with grilled chicken or tofu for a different protein option.
