Ingredients

  • 4 slices of bread (sourdough or your choice)
  • 1 ripe avocado, mashed
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons cream cheese (optional, for extra creaminess)
  • 2 tablespoons butter, softened
  • Salt and pepper to taste
  • Pinch of chili flakes or everything bagel seasoning (optional)

Instructions

  1. In a bowl, mash the avocado with salt, pepper, and optional chili flakes.
  2. Spread a thin layer of cream cheese on one side of each bread slice (optional).
  3. Spread mashed avocado over the cream cheese on two slices.
  4. Sprinkle shredded cheese on top of the avocado, then cover with the remaining bread slices.
  5. Butter the outsides of the sandwiches.
  6. Heat a skillet over medium heat and grill the sandwiches 3–4 minutes per side, until golden and the cheese is melted.
  7. Slice and serve warm.
