Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the softened butter, eggs, vanilla extract, and cream soda to the dry ingredients. Beat on medium speed until well combined and smooth, about 2-3 minutes.
- Gently fold in the fresh raspberries until evenly distributed throughout the batter.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the frosting. In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, cream soda, and vanilla extract, beating until light and fluffy, about 3-5 minutes.
- Once the cupcakes are completely cool, frost them with the cream soda frosting using a piping bag or a spatula. Garnish with fresh raspberries on top.
