Ingredients

  • 2 cups fresh or frozen cranberries, rinsed
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup diced apples (about 1 medium apple)
  • 1 cup mini marshmallows
  • 1 cup chopped walnuts or pecans
  • 1 cup whipped topping (like Cool Whip)
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, combine the cranberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally. Once boiling, reduce heat and simmer for about 10 minutes, or until the cranberries burst and the mixture thickens. Remove from heat and let cool completely.
  2. Once the cranberry mixture is cool, stir in the diced apples, mini marshmallows, and chopped nuts.
  3. In a separate bowl, mix the whipped topping with the vanilla extract until well combined. Gently fold the whipped topping into the cranberry mixture until fully incorporated.
  4. Transfer the salad to a serving bowl or dish and refrigerate for at least 2 hours before serving to allow the flavors to meld.
  5. Serve chilled, and enjoy!
