- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup dried cranberries
- 1/2 cup shelled pistachios, roughly chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the dried cranberries and chopped pistachios until evenly distributed.
- Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
- Bake for 25-30 minutes, or until the logs are golden brown. Remove from the oven and let cool for 10 minutes.
- Carefully slice the logs diagonally into 1/2-inch thick pieces. Place the slices back on the baking sheet, cut side down.
- Bake for an additional 10-15 minutes, turning the biscotti halfway through, until they are crisp and golden.
- Allow to cool completely on a wire rack before serving.
Notes
- For a chocolate twist, dip the cooled biscotti in melted dark chocolate and let it set on parchment paper.
- Substitute almonds or walnuts for the pistachios for a different nutty flavor.
