  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the dried cranberries and chopped pistachios until evenly distributed.
  7. Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide on the prepared baking sheet.
  8. Bake for 25-30 minutes, or until the logs are golden brown. Remove from the oven and let cool for 10 minutes.
  9. Carefully slice the logs diagonally into 1/2-inch thick pieces. Place the slices back on the baking sheet, cut side down.
  10. Bake for an additional 10-15 minutes, turning the biscotti halfway through, until they are crisp and golden.
  11. Allow to cool completely on a wire rack before serving.

Notes

  • For a chocolate twist, dip the cooled biscotti in melted dark chocolate and let it set on parchment paper.
  • Substitute almonds or walnuts for the pistachios for a different nutty flavor.
