- 2 cups all-purpose flour
- 1 cup ground almonds (or almond flour)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup cranberry preserves (or cranberry sauce)
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with a removable bottom or a pie dish.
- In a medium bowl, whisk together the flour, ground almonds, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined. The dough will be slightly crumbly.
- Reserve about 1 cup of the dough for the lattice top. Press the remaining dough evenly into the bottom and up the sides of the prepared tart pan.
- Spread the cranberry preserves evenly over the crust.
- Roll out the reserved dough on a lightly floured surface to about 1/4-inch thick. Cut into strips to create a lattice pattern over the cranberry layer.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
- Allow the torte to cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar before serving.
Notes
- For a nut-free version, substitute ground almonds with an equal amount of oat flour.
- You can also use raspberry or apricot preserves instead of cranberry for a different flavor profile.
- For added texture, consider mixing in some chopped walnuts or pecans into the crust.
