- 1 cup cranberries, fresh or frozen
- 1/2 cup freshly squeezed orange juice
- 1/4 cup pure honey
- 2 tablespoons balsamic vinegar
- 1 teaspoon chopped fresh rosemary (or 1/2 teaspoon dried)
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon extra virgin olive oil
Instructions
- In a medium saucepan, combine the cranberries, orange juice, honey, balsamic vinegar, rosemary, garlic powder, salt, and black pepper.
- Heat over medium flame, stirring occasionally, until the cranberries pop and the mixture thickens, roughly 10-15 minutes. Once done, take it off the heat and allow it to cool slightly.
- While the glaze is cooling, preheat your grill or grill pan to medium-high heat.
- Drizzle the lamb chops with olive oil and generously season with salt and black pepper.
- Place the lamb chops on the grill and cook for about 4-5 minutes per side for a medium-rare finish, adjusting the time to achieve your preferred doneness.
- In the final minute of grilling, generously brush the lamb chops with the cranberry glaze.
- Once grilled to perfection, remove the lamb chops from the heat and let them rest for about 5 minutes before serving.
- Present with additional cranberry glaze on the side for dipping.
