- 1 cup fresh cranberries, rinsed and drained
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1 tablespoon orange zest
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 1/4 cup powdered sugar (for dusting)
Instructions
- In a medium saucepan, combine the fresh cranberries, granulated sugar, water, lemon juice, orange zest, lemon zest, salt, and vanilla extract. Stir to combine and bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 10 minutes, or until the cranberries have burst and the mixture thickens slightly.
- Remove the saucepan from heat and let the mixture cool for about 15 minutes.
- Line a baking sheet with parchment paper. Using a spoon, drop small spoonfuls of the cranberry mixture onto the prepared baking sheet, forming bite-sized mounds.
- Place the baking sheet in the refrigerator and chill for at least 2 hours, or until the bites are firm.
- Once chilled, remove the bites from the parchment paper and dust them lightly with powdered sugar before serving.
Notes
