Description

Deliciously tender beef short ribs glazed with a vibrant cranberry chipotle sauce.


Ingredients

  • 2 pounds beef short ribs
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 cup cranberries, fresh or frozen
  • 1/2 cup packed brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced chipotle peppers in adobo
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for added spice)
  • 1/2 cup beef stock

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef short ribs with sea salt and black pepper.
  3. In a large pot or Dutch oven, heat olive oil over medium-high heat.
  4. Sear the short ribs for 3-4 minutes on each side until golden-brown.
  5. Remove the ribs from the pot and set aside.
  6. In the same pot, combine cranberries, brown sugar, apple cider vinegar, minced chipotle, garlic powder, onion powder, smoked paprika, and cayenne pepper.
  7. Cook the mixture for about 5 minutes, stirring occasionally, until cranberries soften and sauce thickens.
  8. Return the seared short ribs to the pot and pour beef stock over them.
  9. Cover the pot and transfer it to the oven.
  10. Braise for 2.5 to 3 hours, or until the meat is tender and pulls away from the bone.
  11. Remove from the oven and let rest for 10 minutes before serving.

Notes

  • For added spice, include cayenne pepper.
  • Ensure the ribs are mostly submerged in the sauce for optimal flavor.
