Deliciously tender beef short ribs glazed with a vibrant cranberry chipotle sauce.

- 2 pounds beef short ribs
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 1 cup cranberries, fresh or frozen
- 1/2 cup packed brown sugar
- 1/4 cup apple cider vinegar
- 1 tablespoon minced chipotle peppers in adobo
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for added spice)
- 1/2 cup beef stock
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef short ribs with sea salt and black pepper.
- In a large pot or Dutch oven, heat olive oil over medium-high heat.
- Sear the short ribs for 3-4 minutes on each side until golden-brown.
- Remove the ribs from the pot and set aside.
- In the same pot, combine cranberries, brown sugar, apple cider vinegar, minced chipotle, garlic powder, onion powder, smoked paprika, and cayenne pepper.
- Cook the mixture for about 5 minutes, stirring occasionally, until cranberries soften and sauce thickens.
- Return the seared short ribs to the pot and pour beef stock over them.
- Cover the pot and transfer it to the oven.
- Braise for 2.5 to 3 hours, or until the meat is tender and pulls away from the bone.
- Remove from the oven and let rest for 10 minutes before serving.
Notes
- For added spice, include cayenne pepper.
- Ensure the ribs are mostly submerged in the sauce for optimal flavor.
