Description

Cranberry BBQ Mini Meatball Skewers are a delicious and easy-to-make appetizer that combines the savory flavors of meatballs with a sweet and tangy cranberry BBQ sauce.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cranberry sauce
  • 1/2 cup BBQ sauce
  • Wooden skewers (soaked in water for 30 minutes)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Form the mixture into small meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and browned.
  5. While the meatballs are baking, mix the cranberry sauce and BBQ sauce in a small saucepan over medium heat. Stir until well combined and heated through.
  6. Once the meatballs are done, remove them from the oven and let them cool slightly.
  7. Thread the meatballs onto the soaked wooden skewers, about 3-4 meatballs per skewer.
  8. Brush the cranberry BBQ sauce over the meatballs on the skewers, ensuring they are well coated.
  9. Serve the skewers warm, with extra sauce on the side for dipping.

Notes

  • For a spicier kick, add 1/2 teaspoon of cayenne pepper to the meatball mixture.
  • For a healthier option, substitute ground turkey for the ground beef and use whole wheat breadcrumbs.
