Description
Cranberry BBQ Mini Meatball Skewers are a delicious and easy-to-make appetizer that combines the savory flavors of meatballs with a sweet and tangy cranberry BBQ sauce.
Ingredients
Scale
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cranberry sauce
- 1/2 cup BBQ sauce
- Wooden skewers (soaked in water for 30 minutes)
Instructions
- Preheat your oven to 400°F.
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and browned.
- While the meatballs are baking, mix the cranberry sauce and BBQ sauce in a small saucepan over medium heat. Stir until well combined and heated through.
- Once the meatballs are done, remove them from the oven and let them cool slightly.
- Thread the meatballs onto the soaked wooden skewers, about 3-4 meatballs per skewer.
- Brush the cranberry BBQ sauce over the meatballs on the skewers, ensuring they are well coated.
- Serve the skewers warm, with extra sauce on the side for dipping.
Notes
- For a spicier kick, add 1/2 teaspoon of cayenne pepper to the meatball mixture.
- For a healthier option, substitute ground turkey for the ground beef and use whole wheat breadcrumbs.
