Ingredients

  • 1 cup cooked rice (white or brown)
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup fresh pineapple, diced (or canned, drained)
  • 1/2 cup teriyaki sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 large bell peppers (any color), halved and seeds removed
  • 1/4 cup green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the diced onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
  4. Stir in the red and yellow bell peppers and cook for another 3-4 minutes until they start to soften.
  5. Add the diced pineapple, teriyaki sauce, sesame oil, black pepper, and red pepper flakes (if using) to the skillet.
  6. Cook for an additional 5 minutes, stirring occasionally, until the mixture is heated through and well combined.
  7. In a large baking dish, arrange the halved bell peppers cut side up.
  8. Spoon the pineapple teriyaki mixture evenly into each pepper half.
  9. Cover the dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, until the peppers are tender.
  11. Remove from the oven and let cool for a few minutes.
  12. Garnish with chopped green onions and sesame seeds before serving.
