Delicious and healthy Cozy Apricot Chia Bars that make for a perfect snack.

- 1 cup dried apricots, chopped
- 1/2 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup chia seeds
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter or peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup water
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a medium saucepan over low heat, combine the chopped apricots, honey (or maple syrup), almond butter, water, and vanilla extract. Stir until the mixture is smooth and the apricots are softened, about 5 minutes.
- In a large mixing bowl, combine the rolled oats, almond flour, chia seeds, cinnamon, and salt. Pour the warm apricot mixture into the dry ingredients and mix until well combined.
- Spread the mixture evenly in the prepared baking dish, pressing it down firmly with a spatula or your hands.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Remove from the oven and let cool in the pan for at least 10 minutes before lifting out using the parchment paper.
- Once cooled, cut into bars and enjoy!
Notes
- For a chewy texture, store the bars in an airtight container at room temperature.
- For a firmer texture, refrigerate them for a couple of hours before serving.
- Substitute dried apricots with other dried fruits like cranberries or raisins for a different flavor.
- Add a handful of chopped nuts or seeds for extra crunch and nutrition.
