Delicious and hearty Cowboy Cookies packed with oats, chocolate chips, and nuts.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- 2 cups old-fashioned oats
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans or walnuts
- ½ cup shredded coconut (sweetened or unsweetened)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy (2-3 minutes). Add eggs one at a time, then vanilla.
- In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon. Gradually mix into wet ingredients.
- Fold in oats, chocolate chips, nuts, and coconut until combined.
- Drop ¼-cup scoops of dough onto sheets (4 per sheet). Flatten slightly. Bake 12-14 minutes until edges are golden but centers are soft.
- Let rest on sheets for 5 minutes, then transfer to a wire rack.
