Description

Delicious and hearty Cowboy Cookies packed with oats, chocolate chips, and nuts.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 2 cups old-fashioned oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans or walnuts
  • ½ cup shredded coconut (sweetened or unsweetened)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy (2-3 minutes). Add eggs one at a time, then vanilla.
  3. In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon. Gradually mix into wet ingredients.
  4. Fold in oats, chocolate chips, nuts, and coconut until combined.
  5. Drop ¼-cup scoops of dough onto sheets (4 per sheet). Flatten slightly. Bake 12-14 minutes until edges are golden but centers are soft.
  6. Let rest on sheets for 5 minutes, then transfer to a wire rack.
