- 1 cup cottage cheese
- 2 ripe bananas
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a blender, combine the cottage cheese, bananas, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth.
- Add the rolled oats, baking powder, baking soda, and salt to the blender. Blend again until just combined.
- If using, fold in the chocolate chips by hand.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- These muffins can be stored in an airtight container for up to 5 days.
- Feel free to substitute the chocolate chips with nuts or dried fruit for added texture.
- For a lower sugar option, reduce the amount of honey or maple syrup.
