Ingredients

  • 1/2 cup butter
  • 1 large onion, chopped
  • 1 1/2 cups celery, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tsp fresh sage (or 1 tsp dried)
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 2 cups chicken broth
  • 2 large eggs, beaten
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  • Sauté onion and celery in butter until softened.
  • In a large bowl, combine crumbled cornbread, sautéed vegetables, and herbs.
  • In a separate bowl, whisk together broth and eggs. Pour over the cornbread mixture and stir gently.
  • Transfer to the prepared baking dish and bake for 30-40 minutes until golden brown.
