Confetti Corn is a colorful and flavorful side dish that combines fresh corn with bell peppers and spices.

- 3 cups fresh or frozen corn kernels
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped (optional)
- Juice of 1 lime
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped red onion and sauté for about 3 minutes until it becomes translucent.
- Stir in the diced red and green bell peppers and cook for another 3-4 minutes until they soften.
- Add the corn kernels, garlic powder, paprika, salt, and pepper. Mix well and cook for an additional 5-7 minutes, stirring occasionally, until the corn is heated through and slightly caramelized.
- Remove from heat and stir in the lime juice and chopped cilantro, if using.
- Serve warm as a side dish or topping for tacos.
Notes
- For a spicy kick, add 1 diced jalapeño or a pinch of cayenne pepper.
- Try substituting the corn with black beans for a different texture and flavor.
