Description

Confetti Corn is a colorful and flavorful side dish that combines fresh corn with bell peppers and spices.


Ingredients

  • 3 cups fresh or frozen corn kernels
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Juice of 1 lime

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped red onion and sauté for about 3 minutes until it becomes translucent.
  3. Stir in the diced red and green bell peppers and cook for another 3-4 minutes until they soften.
  4. Add the corn kernels, garlic powder, paprika, salt, and pepper. Mix well and cook for an additional 5-7 minutes, stirring occasionally, until the corn is heated through and slightly caramelized.
  5. Remove from heat and stir in the lime juice and chopped cilantro, if using.
  6. Serve warm as a side dish or topping for tacos.

Notes

  • For a spicy kick, add 1 diced jalapeño or a pinch of cayenne pepper.
