Ingredients

  • 1 cup sweetened condensed milk
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1/2 cup crushed graham crackers
  • 1/4 cup unsweetened cocoa powder
  • 8 ounces white chocolate, chopped
  • 1 tablespoon coconut oil (optional, for thinning chocolate)

Instructions

  1. In a large mixing bowl, combine the sweetened condensed milk, powdered sugar, and vanilla extract. Stir until well blended.
  2. Add the shredded coconut, crushed graham crackers, and cocoa powder to the mixture. Mix until all ingredients are evenly incorporated.
  3. Cover the bowl with plastic wrap and refrigerate for about 1 hour, or until the mixture is firm enough to handle.
  4. Once chilled, use your hands to form small balls (about 1 inch in diameter) from the mixture. Place the formed truffles on a baking sheet lined with parchment paper.
  5. In a microwave-safe bowl, combine the chopped white chocolate and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth.
  6. Dip each truffle into the melted white chocolate, allowing any excess to drip off. Return the coated truffles to the parchment-lined baking sheet.
  7. If desired, sprinkle additional shredded coconut on top of the truffles before the chocolate sets.
  8. Refrigerate the truffles for about 30 minutes, or until the chocolate is firm.
