Instructions

  1. Start by cooking the jasmine rice according to the instructions on the package. Once it’s fluffy, set it aside to cool slightly.
  2. In a saucepan, warm the seasoned black beans over medium heat, adjusting the flavor with salt and pepper as needed. Stir occasionally until heated through.
  3. If you’re using rotisserie chicken, shred it and mix in cumin and minced garlic for extra flavor. If cooking from scratch, boil chicken breasts until tender, then shred.
  4. Prepare the arepas by pan-frying them until they achieve a crispy, golden exterior. Once done, slice them in half for easy serving.
  5. On a large platter, artfully arrange the jasmine rice, black beans, shredded chicken, and halved arepas in distinct sections for a colorful presentation.
  6. Place the avocado wedges around the platter and generously spoon the pico de gallo over the top. Sprinkle the crumbled feta cheese across the dish and serve Greek yogurt in a small bowl nearby.
