A refreshing dish featuring cold jasmine rice paired with sautéed baby squid and a zesty lime aioli.


Ingredients

  • 2 cups cooked jasmine rice, cooled
  • 1 pound baby squid, cleaned and cut into rings
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • For the lime aioli:
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
  2. Add the baby squid to the skillet and sauté for 2-3 minutes until they turn opaque. Season with salt and pepper. Remove from heat and let cool.
  3. In a large bowl, combine the cooled jasmine rice, sautéed squid, chopped cilantro, and sliced green onions. Mix well.
  4. In a separate bowl, whisk together mayonnaise, lime juice, lime zest, minced garlic, salt, and pepper to make the lime aioli.
  5. Serve the cold rice mixture in bowls, drizzling the lime aioli on top or serving it on the side for dipping.

Notes

  • For added crunch, toss in some diced cucumber or bell peppers to the rice mixture.
  • Substitute the baby squid with shrimp or scallops for a different seafood flavor.
