Description
A refreshing dish featuring cold jasmine rice paired with sautéed baby squid and a zesty lime aioli.

- 2 cups cooked jasmine rice, cooled
- 1 pound baby squid, cleaned and cut into rings
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- Salt and pepper to taste
- For the lime aioli:
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
- Add the baby squid to the skillet and sauté for 2-3 minutes until they turn opaque. Season with salt and pepper. Remove from heat and let cool.
- In a large bowl, combine the cooled jasmine rice, sautéed squid, chopped cilantro, and sliced green onions. Mix well.
- In a separate bowl, whisk together mayonnaise, lime juice, lime zest, minced garlic, salt, and pepper to make the lime aioli.
- Serve the cold rice mixture in bowls, drizzling the lime aioli on top or serving it on the side for dipping.
Notes
- For added crunch, toss in some diced cucumber or bell peppers to the rice mixture.
- Substitute the baby squid with shrimp or scallops for a different seafood flavor.
