- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1/2 tsp ginger, grated
- 1/4 cup water (to thin sauce)
- 2 green onions, sliced
- 1/4 cup chopped cilantro
- Sesame seeds for garnish
Instructions
- Cook the noodles according to package instructions. Drain and rinse under cold water.
- In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and water until smooth.
- Toss the cooked noodles with the peanut sauce until well coated.
- Add green onions and cilantro, mixing gently.
- Serve chilled, garnished with sesame seeds.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
