  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 cup water (to thin sauce)
  • 2 green onions, sliced
  • 1/4 cup chopped cilantro
  • Sesame seeds for garnish

Instructions

  1. Cook the noodles according to package instructions. Drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and water until smooth.
  3. Toss the cooked noodles with the peanut sauce until well coated.
  4. Add green onions and cilantro, mixing gently.
  5. Serve chilled, garnished with sesame seeds.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
