Description
A delicious and flavorful grilled skirt steak rubbed with coffee and served with a vibrant chimichurri sauce.
Ingredients

- 1 lb skirt steak
- 2 tbsp ground coffee
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1/2 tsp red pepper flakes
Instructions
- In a small bowl, mix together the ground coffee, brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Rub the coffee mixture all over the skirt steak and let it marinate for at least 30 minutes.
- While the steak is marinating, prepare the chimichurri by combining parsley, olive oil, red wine vinegar, minced garlic, and red pepper flakes in a bowl. Mix well and set aside.
- Preheat the grill to medium-high heat.
- Grill the skirt steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.
- Remove the steak from the grill and let it rest for a few minutes before slicing.
- Serve the sliced steak with chimichurri drizzled on top.
Notes
- For a spicier chimichurri, add more red pepper flakes.
- Let the steak rest after grilling to retain its juices.
- This recipe can be easily doubled for larger gatherings.
