Instructions

  1. Mix the rolled oats and cashew butter in a large bowl until they form a cohesive blend.
  2. Gradually drizzle in the maple syrup and cooled espresso, stirring continuously to achieve a smooth consistency.
  3. Fold in the diced candied ginger, mixed seeds, dark chocolate chunks (if desired), sea salt, and ground nutmeg, ensuring that all ingredients are thoroughly incorporated.
  4. Prepare a square baking dish by lining it with parchment paper, allowing some excess to hang over the edges for easy lifting later.
