Description

A delicious Coffee Banana Bread topped with creamy Espresso Frosting, perfect for coffee lovers.

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup chopped walnuts (optional)
  • For the espresso frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons brewed espresso, cooled
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix until well combined.
  3. Add the eggs and vanilla extract to the banana mixture, stirring until smooth.
  4. In a separate bowl, whisk together the baking soda, salt, and flour. Gradually add the dry ingredients to the wet mixture, alternating with the brewed coffee. Stir until just combined. If using, fold in the chopped walnuts.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. While the bread cools, prepare the espresso frosting. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Add the brewed espresso, vanilla extract, and a pinch of salt, then beat until smooth and fluffy.
  8. Once the banana bread is completely cool, spread the espresso frosting evenly on top.

Notes

  • For added flavor, try adding a teaspoon of cinnamon to the batter.
  • Substitute half of the all-purpose flour with whole wheat flour for a healthier twist.
  • Top the frosting with chocolate shavings or cocoa powder for an extra touch.
