  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream and vanilla extract until fully combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the cooled brewed coffee, starting and ending with the flour mixture. Mix until just combined.
  7. In a small bowl, combine the brown sugar, ground cinnamon, and chopped nuts (if using).
  8. Pour half of the batter into the prepared baking pan, spreading it evenly.
  9. Sprinkle half of the brown sugar mixture over the batter.
  10. Pour the remaining batter on top and finish with the rest of the brown sugar mixture.
  11. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  12. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For a richer flavor, try adding a teaspoon of instant coffee granules to the batter.
  • You can substitute the sour cream with Greek yogurt for a tangy twist.
