- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 cup brewed coffee, cooled
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the cooled brewed coffee, starting and ending with the flour mixture. Mix until just combined.
- In a small bowl, combine the brown sugar, ground cinnamon, and chopped nuts (if using).
- Pour half of the batter into the prepared baking pan, spreading it evenly.
- Sprinkle half of the brown sugar mixture over the batter.
- Pour the remaining batter on top and finish with the rest of the brown sugar mixture.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a teaspoon of instant coffee granules to the batter.
- You can substitute the sour cream with Greek yogurt for a tangy twist.
- Serve with a drizzle of icing made from powdered sugar and milk for added sweetness.
