- 2 cups puffed rice cereal
- 1 cup shredded sweetened coconut
- 1 cup white chocolate chips
- 1/2 cup unsalted butter
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup mini marshmallows (optional)
Instructions
- In a large mixing bowl, combine the puffed rice cereal and shredded coconut. If using mini marshmallows, add them to the bowl as well. Set aside.
- In a medium saucepan over low heat, melt the unsalted butter and white chocolate chips together, stirring constantly until smooth.
- Once melted, stir in the granulated sugar, vanilla extract, and salt until well combined. Remove from heat.
- Pour the melted mixture over the puffed rice cereal and coconut. Gently fold everything together until the cereal is evenly coated.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Pour the mixture into the dish and press it down firmly with a spatula or your hands to create an even layer.
- Allow the bars to cool at room temperature for about 30 minutes, or until set. For quicker results, you can refrigerate them for about 15 minutes.
- Once set, lift the bars out of the dish using the parchment paper and cut into squares or rectangles.
Notes
- To enhance the flavor, consider adding a teaspoon of almond extract for a nutty twist.
- For a chocolatey variation, substitute half of the white chocolate chips with semi-sweet chocolate chips.
