Ingredients

  • 1 medium eggplant, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup coconut milk
  • 1/4 cup tamarind paste
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, toss the eggplant cubes with olive oil, salt, and black pepper until evenly coated. Spread the eggplant in a single layer on the prepared baking sheet.
  3. Roast the eggplant in the preheated oven for 20-25 minutes, or until tender and golden brown, flipping halfway through for even cooking.
  4. While the eggplant is roasting, prepare the glaze. In a small saucepan over medium heat, combine coconut milk, tamarind paste, honey (or maple syrup), soy sauce, garlic powder, ginger powder, and lime juice. Stir well and bring to a simmer. Cook for 5-7 minutes, or until the glaze thickens slightly.
  5. Once the eggplant is done roasting, remove it from the oven and drizzle the coconut tamarind glaze over the hot eggplant. Gently toss to coat the eggplant evenly in the glaze.
  6. Return the glazed eggplant to the oven for an additional 5 minutes to allow the flavors to meld.
  7. Remove from the oven and let cool slightly. Garnish with fresh cilantro before serving.

Notes

  • For added crunch, sprinkle toasted sesame seeds on top before serving.
  • You can substitute the eggplant with zucchini or bell peppers for a different flavor profile.
  • For a spicier kick, add a pinch of red pepper flakes to the glaze.
