Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh lime wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the flour, salt, black pepper, garlic powder, and paprika. In another bowl, beat the eggs. In a third bowl, place the shredded coconut and panko breadcrumbs mixed together.
  3. Dip each shrimp first into the flour mixture, shaking off any excess, then into the beaten eggs, and finally coat with the coconut and panko mixture. Place the coated shrimp on the prepared baking sheet.
  4. Bake the shrimp for 15-20 minutes or until they are golden brown and cooked through, flipping them halfway through for even cooking.
  5. While the shrimp are baking, prepare the creamy mayo sauce by mixing the mayonnaise, lime juice, honey, and cayenne pepper in a small bowl until smooth.
  6. Once the shrimp are done, remove them from the oven and let them cool for a few minutes. Serve with the creamy mayo sauce and fresh lime wedges on the side.

Notes

  • For a spicier kick, add more cayenne pepper to the mayo sauce or sprinkle some on the shrimp before baking.
