- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 2 tablespoons coconut oil, melted
- 2 tablespoons matcha green tea powder
- 1 teaspoon vanilla extract
- Pinch of salt
- Extra shredded coconut for rolling
Instructions
- In a mixing bowl, combine the shredded coconut, almond flour, maple syrup, melted coconut oil, matcha powder, vanilla extract, and salt. Mix until well combined and a sticky dough forms.
- Refrigerate the mixture for about 30 minutes to firm up, making it easier to handle.
- Once chilled, use your hands to scoop out small portions of the mixture and roll them into bite-sized balls.
- Roll each truffle in extra shredded coconut to coat evenly.
- Place the truffles on a parchment-lined baking sheet and refrigerate for another 15-20 minutes to set.
- Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to a week.
Notes
- For a chocolate twist, add 1 tablespoon of cocoa powder to the mixture before rolling into balls.
- You can also substitute honey for maple syrup for a different flavor profile.
