Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons matcha green tea powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra shredded coconut for rolling

Instructions

  1. In a mixing bowl, combine the shredded coconut, almond flour, maple syrup, melted coconut oil, matcha powder, vanilla extract, and salt. Mix until well combined and a sticky dough forms.
  2. Refrigerate the mixture for about 30 minutes to firm up, making it easier to handle.
  3. Once chilled, use your hands to scoop out small portions of the mixture and roll them into bite-sized balls.
  4. Roll each truffle in extra shredded coconut to coat evenly.
  5. Place the truffles on a parchment-lined baking sheet and refrigerate for another 15-20 minutes to set.
  6. Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to a week.

Notes

  • For a chocolate twist, add 1 tablespoon of cocoa powder to the mixture before rolling into balls.
