- 2 cups plain Greek yogurt
- 1 cup mango puree (fresh or canned)
- 1/2 cup shredded unsweetened coconut
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup diced fresh mango (for topping)
- 1/4 cup chopped nuts (optional, for topping)
Instructions
- In a mixing bowl, combine the Greek yogurt, mango puree, honey (or maple syrup), vanilla extract, and salt. Stir until well combined and smooth.
- Line a baking sheet with parchment paper. Pour the yogurt mixture onto the prepared baking sheet and spread it evenly to about 1/2 inch thick.
- Sprinkle the shredded coconut evenly over the yogurt mixture. Add the diced fresh mango and chopped nuts (if using) on top.
- Place the baking sheet in the freezer and freeze for at least 4 hours or until completely solid.
- Once frozen, remove the bark from the freezer and let it sit for a few minutes to soften slightly. Break it into pieces and serve immediately.
Notes
- For a tropical twist, add a handful of chopped pineapple or banana to the yogurt mixture before spreading it on the baking sheet.
- Substitute the mango puree with other fruit purees like strawberry or raspberry for different flavor profiles.
