Ingredients

  • 1 cup mango puree (fresh or canned)
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup diced fresh mango (for topping)
  • 1/4 cup chopped nuts (optional, for topping)

Instructions

  1. In a mixing bowl, combine the Greek yogurt, mango puree, honey (or maple syrup), vanilla extract, and salt. Stir until well combined and smooth.
  2. Line a baking sheet with parchment paper. Pour the yogurt mixture onto the prepared baking sheet and spread it evenly to about 1/2 inch thick.
  3. Sprinkle the shredded coconut evenly over the yogurt mixture. Add the diced fresh mango and chopped nuts (if using) on top.
  4. Place the baking sheet in the freezer and freeze for at least 4 hours or until completely solid.
  5. Once frozen, remove the bark from the freezer and let it sit for a few minutes to soften slightly. Break it into pieces and serve immediately.
