  • 1 cup sweetened shredded coconut
  • For the macaroon topping:
  • 2 large egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F. Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium saucepan, melt the chocolate chips and butter over low heat, stirring until smooth. Remove from heat and let it cool slightly.
  3. In a large mixing bowl, combine the sugar, eggs, and vanilla extract. Whisk until well blended. Gradually add the melted chocolate mixture, stirring until combined.
  4. Sift in the flour and salt, mixing until just combined. Fold in the shredded coconut. Pour the brownie batter into the prepared baking pan, spreading it evenly.
  5. In a separate bowl, beat the egg whites until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form. Gently fold in the vanilla extract and shredded coconut until well combined.
  6. Spread the macaroon topping over the brownie batter in the pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Allow the brownies to cool in the pan for at least 15 minutes before cutting into squares. For best results, chill in the refrigerator for an hour before serving.
