Description
A light and refreshing dessert that combines the tropical flavors of coconut and lime in a moist cake.
Ingredients

- 1 box of white cake mix
- 1 cup of coconut milk
- 3 large eggs
- 1/2 cup of vegetable oil
- 1/2 cup of shredded coconut
- 1/4 cup of fresh lime juice
- 1 can of sweetened condensed milk
- 1 cup of whipped topping
- 1/4 cup of lime zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cake mix, coconut milk, eggs, and vegetable oil. Mix until well combined.
- Fold in the shredded coconut and lime juice.
- Pour the batter into a greased 9×13 inch baking pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and let it cool for 10 minutes.
- Poke holes all over the top of the cake using a fork.
- In a separate bowl, mix the sweetened condensed milk with lime juice and pour it over the cake, allowing it to soak in.
- Refrigerate the cake for at least 2 hours.
- Before serving, top with whipped topping and sprinkle with lime zest.
Notes
- For a stronger lime flavor, add more lime juice to the condensed milk mixture.
- Can be made a day in advance for better flavor.
- Store leftovers in the refrigerator.
