- 1 can (13.5 ounces) coconut milk
- 1 cup chicken stock
- Juice and zest of 1 lime
- 2 cloves garlic, finely chopped

- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 4 cups assorted salad greens (like arugula, spinach, and romaine)
- 1 cup halved cherry tomatoes
- 1/2 cucumber, thinly sliced
- 1/4 red onion, finely sliced
- 1/4 cup chopped fresh cilantro
- 1 avocado, cut into cubes
- 1 tablespoon extra virgin olive oil
- 1 tablespoon honey (optional)
Instructions
- Pour the coconut milk and chicken stock into a large pot, then stir in the lime juice, lime zest, minced garlic, grated ginger, salt, and black pepper. Heat the mixture over medium flame until it starts to simmer gently.
- Carefully place the chicken breasts into the pot, ensuring they are fully immersed in the flavorful broth. Cover the pot and allow the chicken to poach for about 15-20 minutes, or until it reaches an internal temperature of 165°F.
- Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes before slicing or shredding it into bite-sized pieces.
- In a large mixing bowl, combine the salad greens, halved cherry tomatoes, cucumber slices, red onion, cilantro, and diced avocado.
- In a separate small bowl, whisk together the olive oil and honey (if using) until well blended. Drizzle this dressing over the salad mixture and toss everything together gently to coat.
- Finally, arrange the poached chicken on top of the salad and serve right away for a refreshing meal.
