  • 1 can (13.5 ounces) coconut milk
  • 1 cup chicken stock
  • Juice and zest of 1 lime
  • 2 cloves garlic, finely chopped
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 4 cups assorted salad greens (like arugula, spinach, and romaine)
  • 1 cup halved cherry tomatoes
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, finely sliced
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, cut into cubes
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey (optional)

Instructions

  1. Pour the coconut milk and chicken stock into a large pot, then stir in the lime juice, lime zest, minced garlic, grated ginger, salt, and black pepper. Heat the mixture over medium flame until it starts to simmer gently.
  2. Carefully place the chicken breasts into the pot, ensuring they are fully immersed in the flavorful broth. Cover the pot and allow the chicken to poach for about 15-20 minutes, or until it reaches an internal temperature of 165°F.
  3. Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes before slicing or shredding it into bite-sized pieces.
  4. In a large mixing bowl, combine the salad greens, halved cherry tomatoes, cucumber slices, red onion, cilantro, and diced avocado.
  5. In a separate small bowl, whisk together the olive oil and honey (if using) until well blended. Drizzle this dressing over the salad mixture and toss everything together gently to coat.
  6. Finally, arrange the poached chicken on top of the salad and serve right away for a refreshing meal.
