Coconut Lime MCT Oil Fat Bombs are a delicious and energizing keto treat, perfect for a quick boost of clean energy.


Ingredients

  • 1 cup coconut oil, melted
  • 1/2 cup MCT oil
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons lime zest
  • 1/4 cup erythritol (or preferred sweetener)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. In a medium mixing bowl, combine the melted coconut oil and MCT oil. Stir until well blended.
  2. Add the unsweetened shredded coconut, lime juice, lime zest, erythritol, vanilla extract, and sea salt to the bowl. Mix thoroughly until all ingredients are evenly combined.
  3. Pour the mixture into silicone molds or an ice cube tray, filling each compartment about three-quarters full.
  4. Place the molds in the freezer for about 1-2 hours, or until the fat bombs are completely solid.
  5. Once solid, carefully remove the fat bombs from the molds and store them in an airtight container in the freezer for up to 2 months.

Notes

  • For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the mixture before pouring it into molds.
  • Experiment with different citrus flavors by substituting lime juice and zest with lemon or orange for a refreshing variation.
