- 1 cup crushed graham crackers
- 1/4 cup melted coconut oil
- 1/2 cup cream cheese, softened
- 1/2 cup coconut cream
- 1/4 cup lime juice
- 1/4 cup powdered sugar
- 1/2 cup shredded coconut
- Lime zest for garnish
Instructions
- In a bowl, mix the crushed graham crackers with melted coconut oil until well combined.
- Press the mixture into the bottom of a lined muffin tin to form the crust.
- In another bowl, beat together the cream cheese, coconut cream, lime juice, and powdered sugar until smooth.
- Fold in the shredded coconut into the cream cheese mixture.
- Pour the cheesecake mixture over the crust in the muffin tin.
- Chill in the refrigerator for at least 2 hours until set.
- Once set, remove from the muffin tin and garnish with lime zest before serving.
Notes
- For a stronger lime flavor, add more lime juice or zest.
- These bites can be stored in the refrigerator for up to a week.
- Feel free to substitute the graham crackers with a gluten-free alternative for a gluten-free version.
