Description

Delicious no-bake coconut lime cheesecake bites that are perfect for a refreshing dessert.


Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup melted coconut oil
  • 1/2 cup cream cheese, softened
  • 1/2 cup coconut cream
  • 1/4 cup lime juice
  • 1/4 cup powdered sugar
  • 1/2 cup shredded coconut
  • Lime zest for garnish

Instructions

  1. In a bowl, mix the crushed graham crackers with melted coconut oil until well combined.
  2. Press the mixture into the bottom of a lined muffin tin to form the crust.
  3. In another bowl, beat together the cream cheese, coconut cream, lime juice, and powdered sugar until smooth.
  4. Fold in the shredded coconut into the cream cheese mixture.
  5. Pour the cheesecake mixture over the crust in the muffin tin.
  6. Chill in the refrigerator for at least 2 hours until set.
  7. Once set, remove from the muffin tin and garnish with lime zest before serving.

Notes

  • For a stronger lime flavor, add more lime juice or zest.
  • These bites can be stored in the refrigerator for up to a week.
