Ingredients

  • 1 cup coconut milk
  • 1/2 cup fresh lime juice
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced
  • Salt to taste

Instructions

  1. In a bowl, combine the diced fish and lime juice. Let it marinate for about 15-20 minutes until the fish is opaque.
  2. Add the coconut milk, red onion, cucumber, cilantro, and jalapeño to the fish mixture.
  3. Season with salt to taste and mix well.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve cold, garnished with additional cilantro if desired.

Notes

  • For a spicier version, leave some seeds in the jalapeño.
