A refreshing twist on traditional ceviche, featuring coconut and lime for a tropical flavor.
Ingredients

- 1 lb fresh fish (such as snapper or tilapia), diced
- 1 cup coconut milk
- 1/2 cup fresh lime juice
- 1/2 cup diced red onion
- 1/2 cup diced cucumber
- 1/4 cup chopped cilantro
- 1 jalapeño, seeded and minced
- Salt to taste
Instructions
- In a bowl, combine the diced fish and lime juice. Let it marinate for about 15-20 minutes until the fish is opaque.
- Add the coconut milk, red onion, cucumber, cilantro, and jalapeño to the fish mixture.
- Season with salt to taste and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold, garnished with additional cilantro if desired.
Notes
- For a spicier version, leave some seeds in the jalapeño.
- Can be served with tortilla chips or on lettuce leaves for a low-carb option.
