Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 tablespoon red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 kaffir lime leaves, torn into pieces
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  3. Add the diced red bell pepper, carrot, and zucchini to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  4. Stir in the red curry paste, ground cumin, ground coriander, salt, and black pepper. Cook for another 2 minutes to toast the spices.
  5. Pour in the coconut milk and add the chickpeas and torn kaffir lime leaves. Bring the mixture to a gentle simmer, then reduce the heat to low.
  6. Cover and let it cook for 15-20 minutes, allowing the flavors to meld.
  7. Remove the pot from heat and stir in the lime juice. Taste and adjust seasoning if necessary.
  8. Remove the kaffir lime leaves before serving.
  9. Serve hot, garnished with fresh cilantro. This stew pairs well with rice or crusty bread.

Notes

  • For a spicier kick, add sliced jalapeños or a dash of hot sauce while cooking.
  • You can also substitute the chickpeas with lentils for a different texture and flavor.
