A flavorful and hearty Coconut Kaffir Lime Chickpea Stew that combines the richness of coconut milk with the zest of kaffir lime and spices.

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) coconut milk
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1 zucchini, diced
- 1 tablespoon red curry paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1–2 kaffir lime leaves, torn into pieces
- 1 tablespoon lime juice
- Fresh cilantro, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
- Add the diced red bell pepper, carrot, and zucchini to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
- Stir in the red curry paste, ground cumin, ground coriander, salt, and black pepper. Cook for another 2 minutes to toast the spices.
- Pour in the coconut milk and add the chickpeas and torn kaffir lime leaves. Bring the mixture to a gentle simmer, then reduce the heat to low.
- Cover and let it cook for 15-20 minutes, allowing the flavors to meld.
- Remove the pot from heat and stir in the lime juice. Taste and adjust seasoning if necessary.
- Remove the kaffir lime leaves before serving.
- Serve hot, garnished with fresh cilantro. This stew pairs well with rice or crusty bread.
Notes
- For a spicier kick, add sliced jalapeños or a dash of hot sauce while cooking.
- You can also substitute the chickpeas with lentils for a different texture and flavor.
