- 4 cups powdered sugar
- 2 tablespoons coconut milk
- 1 teaspoon vanilla extract
- ½ cup unsweetened shredded coconut (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a large mixing bowl, whisk together the flour, sugar, shredded coconut, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and coconut milk until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until fluffy. Gradually add the powdered sugar, mixing well. Add the coconut milk and vanilla extract, and beat until smooth and creamy.
- Once the cupcakes are completely cool, frost them generously with the coconut frosting. Sprinkle the tops with additional shredded coconut for garnish.
Notes
- For a tropical twist, try adding crushed pineapple to the batter or frosting.
- You can also substitute almond extract for vanilla for a different flavor profile.
- For a lighter version, use Greek yogurt in place of some of the butter in the frosting.
