Ingredients

  • 1 teaspoon vanilla extract
  • ½ cup coconut milk
  • ½ cup sweetened condensed milk
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons coconut milk
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened shredded coconut (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, sugar, shredded coconut, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and coconut milk until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  7. While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until fluffy. Gradually add the powdered sugar, mixing well. Add the coconut milk and vanilla extract, and beat until smooth and creamy.
  8. Once the cupcakes are completely cool, frost them generously with the coconut frosting. Sprinkle the tops with additional shredded coconut for garnish.

Notes

  • For a tropical twist, try adding crushed pineapple to the batter or frosting.
  • You can also substitute almond extract for vanilla for a different flavor profile.
  • For a lighter version, use Greek yogurt in place of some of the butter in the frosting.
