- 1 cup dried green or brown lentils, rinsed and drained
- 1 ½ cups water
- 1 cup grated carrots
- 1 cup cooked quinoa
- 1 cup shredded unsweetened coconut
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 large egg, beaten
- ½ cup breadcrumbs (or gluten-free breadcrumbs)
- 2 tablespoons coconut oil (for frying)
Instructions
- In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until lentils are tender. Drain any excess water and let cool slightly.
- In a large mixing bowl, combine cooked lentils, grated carrots, cooked quinoa, shredded coconut, chopped onion, minced garlic, grated ginger, curry powder, cumin, salt, and black pepper. Mix well.
- Add the beaten egg and breadcrumbs to the mixture, stirring until everything is well combined. If the mixture is too wet, add a little more breadcrumbs until it holds together.
- Form the mixture into patties, about 2-3 inches in diameter.
- Heat coconut oil in a large skillet over medium heat. Once hot, add the patties in batches, cooking for about 4-5 minutes on each side or until golden brown and crispy.
- Transfer cooked patties to a paper towel-lined plate to absorb excess oil. Serve warm.
Notes
- For extra flavor, try adding chopped fresh cilantro or parsley to the mixture before forming the patties.
- You can also serve these patties with a side of yogurt or a spicy dipping sauce for added zest.
- For a vegan option, substitute the egg with a flaxseed egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water, let sit for 5 minutes).
