- 4 salmon fillets (6 ounces each)
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- Lime wedges, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine cocoa powder, brown sugar, smoked paprika, cumin, garlic powder, salt, and black pepper. Mix well to create a spice rub.
- Pat the salmon fillets dry with paper towels. Place them skin-side down on a baking sheet lined with parchment paper.
- Drizzle olive oil and lime juice over the salmon fillets. Rub the spice mixture evenly over the top of each fillet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked to your desired doneness.
- Remove from the oven and let rest for a few minutes before serving. Serve with lime wedges on the side.
Notes
- For a sweeter flavor, add an extra teaspoon of brown sugar to the spice mix.
- Serve the salmon over a bed of quinoa or alongside roasted vegetables for a complete meal.
