Description

Cloud Bread Tiramisu is a light and fluffy dessert that combines the classic flavors of tiramisu with a unique cloud bread base, making it a delightful treat for any occasion.


Ingredients

  • 2 large eggs
  • 1/4 teaspoon cream of tartar
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered erythritol (or powdered sugar)
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 1/2 cup heavy whipping cream
  • 1 tablespoon cocoa powder
  • Chocolate shavings or cocoa powder for garnish

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, separate the egg whites from the yolks. Add cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.
  3. In another bowl, combine the egg yolks, cream cheese, powdered erythritol, and vanilla extract. Mix until smooth and creamy.
  4. Gently fold the egg whites into the yolk mixture until fully combined, being careful not to deflate the egg whites.
  5. Spoon the mixture onto the prepared baking sheet, forming 4 to 6 round mounds. Bake for 25-30 minutes or until golden brown. Let cool completely.
  6. In a shallow dish, mix the cooled coffee and coffee liqueur (if using). Dip each cloud bread round briefly in the coffee mixture, ensuring they soak up some flavor but do not become soggy.
  7. In a separate bowl, whip the heavy cream until stiff peaks form. Layer half of the soaked cloud bread rounds in a serving dish, followed by half of the whipped cream. Repeat with the remaining cloud bread and whipped cream.
  8. Dust the top with cocoa powder and garnish with chocolate shavings if desired. Refrigerate for at least 2 hours to allow flavors to meld before serving.

Notes

  • For a lighter version, substitute the cream cheese with Greek yogurt.
  • You can also add a layer of fresh berries between the cloud bread and whipped cream for added flavor and texture.
