Description
A classic and impressive dessert for the holiday season, the Classic Yule Log (Bûche de Noël) is a chocolate roll filled with whipped cream and topped with a rich chocolate glaze.
Ingredients
Scale
- 3 large eggs
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons unsalted butter, melted
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- 1 cup semi-sweet chocolate chips (for glaze)
- ½ cup heavy cream (for glaze)
Instructions
- Preheat your oven to 350°F and prepare a 15×10-inch jelly roll pan by greasing it and lining it with parchment paper.
- In a large bowl, whisk the eggs and granulated sugar together until thick and pale, about 5 minutes. Add the vanilla extract and mix well.
- In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined. Add the melted butter and fold until smooth.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes, or until the cake springs back when touched.
- Dust a clean kitchen towel with powdered sugar. Once the cake is done, invert it onto the towel and peel off the parchment paper. Roll the cake up with the towel from one short end and let it cool completely.
- To make the chocolate glaze, heat the heavy cream in a small saucepan until simmering. Pour it over the chocolate chips in a bowl and let sit for 2-3 minutes before stirring until smooth. Allow to cool slightly.
- Once the cake has cooled, gently unroll it. In a separate bowl, whip the heavy cream with powdered sugar and 1 teaspoon of vanilla extract until soft peaks form. Spread the whipped cream over the unrolled cake, then carefully roll it back up without the towel.
- Position the rolled cake seam-side down on a serving platter. Pour the chocolate glaze over the top, using a spatula for texture if desired. Refrigerate for at least 30 minutes before slicing and serving.
Notes
- For extra festive flair, sprinkle powdered sugar on top or add decorative touches like edible glitter or marzipan figures.
- For a mocha twist, mix in 1 tablespoon of instant coffee granules into the batter.
