Description

Classic Tourtière is a traditional French-Canadian meat pie that delights the palate with its rich flavors and flaky crust.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cubed
  • 6 to 8 tablespoons ice water
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. In a large skillet over medium heat, cook the ground pork and beef until browned. Drain excess fat. Add the chopped onion and garlic, cooking until the onion is translucent.
  3. Stir in the thyme, cinnamon, nutmeg, black pepper, and salt. Add the beef broth and Worcestershire sauce, mixing well. Simmer for 5 minutes, then remove from heat and let cool.
  4. Preheat the oven to 425°F. Roll out one dough disk on a floured surface to fit a 9-inch pie plate. Place the rolled dough in the pie plate and fill with the meat mixture.
  5. Roll out the second dough disk and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust for steam to escape. Brush the top with the beaten egg.
  6. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown. Let cool for 10 minutes before slicing.

Notes

  • For a spicier version, add a pinch of cayenne pepper or some chopped jalapeños to the meat mixture.
  • You can substitute the ground pork and beef with ground turkey or chicken for a lighter option.
