Description
Classic Tourtière is a traditional French-Canadian meat pie that delights the palate with its rich flavors and flaky crust.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 6 to 8 tablespoons ice water
- 1 pound ground pork
- 1 pound ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- In a large skillet over medium heat, cook the ground pork and beef until browned. Drain excess fat. Add the chopped onion and garlic, cooking until the onion is translucent.
- Stir in the thyme, cinnamon, nutmeg, black pepper, and salt. Add the beef broth and Worcestershire sauce, mixing well. Simmer for 5 minutes, then remove from heat and let cool.
- Preheat the oven to 425°F. Roll out one dough disk on a floured surface to fit a 9-inch pie plate. Place the rolled dough in the pie plate and fill with the meat mixture.
- Roll out the second dough disk and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust for steam to escape. Brush the top with the beaten egg.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown. Let cool for 10 minutes before slicing.
Notes
- For a spicier version, add a pinch of cayenne pepper or some chopped jalapeños to the meat mixture.
- You can substitute the ground pork and beef with ground turkey or chicken for a lighter option.
