Ingredients

  • 8 ounces of rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, mozzarella cheese, and parsley.
  3. Pour the Italian dressing over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
