Classic Cucumber Sandwiches are a delightful and elegant snack perfect for tea parties or light lunches.

- 8 slices of white or whole wheat bread
- 1 cup cream cheese, softened
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large cucumber, thinly sliced
- Optional: 1/4 cup radishes, thinly sliced for garnish
Instructions
- In a medium bowl, combine the softened cream cheese, dill, lemon juice, salt, and black pepper. Mix until smooth and well combined.
- Lay out the slices of bread on a clean surface. Spread a generous layer of the cream cheese mixture on one side of each slice.
- On four of the slices, layer the cucumber slices evenly over the cream cheese. If using, add radish slices on top of the cucumbers.
- Place the remaining slices of bread on top, cream cheese side down, to form sandwiches.
- Using a sharp knife, trim the crusts off each sandwich for a neat presentation. Cut each sandwich into quarters or halves, depending on your preference.
- Arrange the sandwiches on a platter and serve immediately, or cover with plastic wrap and refrigerate for up to 1 hour before serving.
Notes
- For a twist, add thinly sliced smoked salmon or turkey to the sandwiches for added flavor and protein.
- Experiment with different herbs like chives or basil in the cream cheese mixture for a unique taste.
