  • 8 ounces halloumi cheese, cut into ½-inch thick slices
  • 1 orange, juiced and zested
  • 1 lemon, juiced and zested
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 1 red bell pepper, sliced into strips
  • 1 zucchini, cut into rounds
  • 1 yellow squash, cut into rounds
  • 1 small red onion, sliced into wedges
  • Fresh parsley, finely chopped (for garnish)

Instructions

  1. Combine the orange juice, lemon juice, orange zest, lemon zest, olive oil, oregano, onion powder, salt, and pepper in a mixing bowl.
  2. Place the halloumi slices into the mixture, ensuring they are thoroughly coated.
  3. Cover the bowl and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours.
  4. Heat your grill or grill pan to medium-high heat.
  5. Toss the red bell pepper, zucchini, yellow squash, and red onion in a separate bowl with a splash of olive oil, salt, and pepper.
  6. Once the grill is ready, place the marinated halloumi slices and the seasoned vegetables onto the grill.
  7. Cook the halloumi for approximately 2-3 minutes on each side until it develops a golden crust.
  8. Grill the vegetables for about 4-5 minutes, turning them occasionally until they are tender.
  9. After grilling, take the halloumi and vegetables off the grill and arrange them on a serving platter.
  10. Sprinkle with freshly chopped parsley for garnish.
