- 8 ounces halloumi cheese, cut into ½-inch thick slices
- 1 orange, juiced and zested
- 1 lemon, juiced and zested
- 2 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- Salt and freshly ground black pepper to taste
- 1 red bell pepper, sliced into strips
- 1 zucchini, cut into rounds
- 1 yellow squash, cut into rounds
- 1 small red onion, sliced into wedges
- Fresh parsley, finely chopped (for garnish)
Instructions
- Combine the orange juice, lemon juice, orange zest, lemon zest, olive oil, oregano, onion powder, salt, and pepper in a mixing bowl.
- Place the halloumi slices into the mixture, ensuring they are thoroughly coated.
- Cover the bowl and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours.
- Heat your grill or grill pan to medium-high heat.
- Toss the red bell pepper, zucchini, yellow squash, and red onion in a separate bowl with a splash of olive oil, salt, and pepper.
- Once the grill is ready, place the marinated halloumi slices and the seasoned vegetables onto the grill.
- Cook the halloumi for approximately 2-3 minutes on each side until it develops a golden crust.
- Grill the vegetables for about 4-5 minutes, turning them occasionally until they are tender.
- After grilling, take the halloumi and vegetables off the grill and arrange them on a serving platter.
- Sprinkle with freshly chopped parsley for garnish.
Notes
- For a more intense flavor, marinate the halloumi for up to 2 hours.
