Description

A delicious seafood stew originating from San Francisco, Cioppino is packed with flavor and perfect for any seafood lover.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 1 cup fish stock or clam juice
  • 1 cup dry white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 pound shrimp, peeled and deveined
  • 1 pound mussels, cleaned and debearded
  • 1 pound clams, scrubbed
  • 1 pound firm white fish (like cod or halibut), cut into chunks
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Crusty bread (for serving)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced tomatoes (with juices), fish stock (or clam juice), white wine, oregano, and red pepper flakes. Bring the mixture to a simmer.
  4. Once simmering, add the shrimp, mussels, clams, and fish. Season with salt and pepper to taste.
  5. Cover the pot and cook for about 5-7 minutes, or until the mussels and clams have opened and the shrimp are cooked through.
  6. Discard any mussels or clams that do not open. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley and accompanied by crusty bread for dipping.

Notes

  • For a spicier kick, add more red pepper flakes or a dash of hot sauce.
  • You can substitute the seafood with your favorites or whatever is fresh and available, such as scallops or squid.
