Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon brown sugar

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup granulated sugar. Mix until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with 1 cup granulated sugar and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. In a separate bowl, mix the sour cream, ground cinnamon, and nutmeg until smooth. Gently fold this mixture into the cream cheese batter until just combined.
  7. Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  10. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.
  11. Before serving, mix 1 tablespoon of brown sugar with a sprinkle of cinnamon and sprinkle it over the top of the cheesecake for added flavor.

Notes

  • For a richer flavor, try adding a teaspoon of lemon zest to the cream cheese mixture.
  • For a chocolate twist, swirl in some melted chocolate before baking.
