Description

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon cinnamon
  • 2 tablespoons erythritol (or your preferred keto sweetener)
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon unsweetened almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well.
  3. Add the egg and melted butter to the dry ingredients. Stir until combined.
  4. Microwave the mozzarella cheese for about 30 seconds until melted. Add the melted cheese to the dough mixture and mix until a dough forms.
  5. Transfer the dough to the prepared baking sheet and press it into a round pizza shape, about 1/4 inch thick.
  6. Bake the crust for 15-20 minutes or until golden brown.
  7. While the crust is baking, mix the cinnamon and erythritol in a small bowl.
  8. In another bowl, combine the softened cream cheese, almond milk, and vanilla extract until smooth.
  9. Once the crust is done, remove it from the oven and spread the cream cheese mixture evenly over the top.
  10. Sprinkle the cinnamon sugar mixture over the cream cheese layer.
  11. Return the pizza to the oven for an additional 5 minutes to warm through.
  12. Allow to cool slightly before slicing.
