- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 2 tablespoons melted butter
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon cinnamon
- 2 tablespoons erythritol (or your preferred keto sweetener)
- 2 tablespoons cream cheese, softened
- 1 tablespoon unsweetened almond milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well.
- Add the egg and melted butter to the dry ingredients. Stir until combined.
- Microwave the mozzarella cheese for about 30 seconds until melted. Add the melted cheese to the dough mixture and mix until a dough forms.
- Transfer the dough to the prepared baking sheet and press it into a round pizza shape, about 1/4 inch thick.
- Bake the crust for 15-20 minutes or until golden brown.
- While the crust is baking, mix the cinnamon and erythritol in a small bowl.
- In another bowl, combine the softened cream cheese, almond milk, and vanilla extract until smooth.
- Once the crust is done, remove it from the oven and spread the cream cheese mixture evenly over the top.
- Sprinkle the cinnamon sugar mixture over the cream cheese layer.
- Return the pizza to the oven for an additional 5 minutes to warm through.
- Allow to cool slightly before slicing.
Notes
- This recipe serves 4.
- For added crunch, serve with pork rinds or cucumber slices on the side.
- For a chocolate twist, add a tablespoon of unsweetened cocoa powder to the cream cheese mixture.
- Experiment with different toppings like chopped nuts or unsweetened coconut flakes for extra texture.
