- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar, divided
- 2 teaspoons ground cinnamon, divided
- 3 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- ½ cup all-purpose flour
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, ½ cup of sugar, and 1 teaspoon of cinnamon. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the remaining ½ cup of sugar and 1 teaspoon of cinnamon, mixing until well combined. Add the vanilla extract and mix again.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- Gently fold in the sour cream and flour until fully incorporated.
- Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.
- Before serving, mix ¼ cup of sugar with 1 teaspoon of cinnamon in a small bowl. Sprinkle this mixture generously over the top of the chilled cheesecake.
Notes
- For a chocolate twist, drizzle melted chocolate over the top before serving.
- You can also add a layer of caramel sauce for extra sweetness.
- If you prefer a lighter version, substitute Greek yogurt for the sour cream.
